Pumpkin Seeds

Happy Halloween! I thought a great way to celebrate the holiday would be to post my roasted pumpkin seeds recipe. I warn you, I like my pumpkin seeds very salty, so be prepared!


Katie's Roasted Pumpkin Seeds Recipe
Ingredients:
-2 pumpkins (this is assuming that you will be carving pumpkins with at least one friend.)
-extra-virgin olive oil (evoo for those Rachael Ray fans)
-lots of salt

Directions:
Carve your pumpkins with a friend or two. When scooping out the pumpkin guts, make sure to separate the seeds into a bowl. Put seeds in a colander and rinse. Place seeds on paper towels and let dry.

Preheat oven to 325 degrees.

Line a baking sheet with aluminum foil. Toss seeds with enough extra-virgin olive oil to coat the seeds. Sprinkle with salt. Spread seeds on baking sheet. Sprinkle with more salt. Bake 20-35 minutes or until golden-brown and crispy!

Roasted pumpkin seeds, evoo and Rachel Ray (although I'm afraid that RR may over-saturate her welome one of these days)....recipe sounds mighty fine
